| Island Pineapple Pops |
Summer is almost upon us! Well, if you live in Florida then you know that seasons come in a pair. Summer and Spring(ish) Summer.
While I do dream of one day lounging oceanside in a hammock with a tasty Mojito in hand, I have to settle for poolside and a popsicle instead. So, I created an adult only popsicle that will bring the islands to you!
The pictures are a bit poor because the popsicles started to melt as soon as they came in contact with the glass, but they still tasted great!
Grab your shades and some sunscreen and head to the pool with one of these Pops in hand!

Island Pineapple Pops
3 oz. Key Lime Pie Whipped Pinnacle Vodka
2 oz. Coconut rum
1/4 C Island Pineapple gelatin mix
1/2 C. water
--whisk all ingredients together in a bowl for 1-2 minutes or until gelatin is dissolved
--pour into popsicle molds OR you can use small plastic party cups;
--if you're using plastic cups you may have to freeze for about 30 minutes and then place the sticks in once the pops are at slushy consistency.
--freeze for at least 6 hours or overnight
