| Dark Chocolate Almond Butter |
I'm happy to announce that I'm the owner of a brand new Ninja food processor! YAY ME!
Since I have a brand new toy, I am free to recreate a few things that I've been missing out on for the last couple of weeks.
Many food items can be pricey when bought in from the supermarket, but can be made right in your own kitchen. You can save money and get the satisfaction from making your own ingredients. Almond flour, oat flour, nut butters, and coconut butter (to name a few) only require a few minutes in the processor and they're complete.
Dark chocolate almond butter is incredibly easy to make and requires only almonds, dark chocolate and patience. A pretty spiffy food processor wouldn't hurt either.
Dark Chocolate Almond Butter (pictured above)
8 oz. almonds
2 oz. melted bittersweet or dark chocolate chips (I used Ghirardelli 60% Cacao)
--pulse almonds in food processor until the mixture begins to resemble a paste. This will take around 10-15 minutes depending on the processor. Scrape the sides of the bowl to ensure even distribution.
--Don't give up!!! You may feel that you're doing something wrong and that it just isn't coming together. I promise that it will!!
--Once the almonds are completely moistened and you can see the oil, pour in the melted chocolate. Pulse for a little longer until smooth and blended.
Note: This spread is only slightly sweet and is wonderful when paired with sliced apples, strawberries or celery!!

| Pistachio Paste |
Pistachio paste is widely used in fine desserts and can be pretty expensive. If you don't use it that often, it may be more cost efficient to just whip up a batch of your own. This recipe is purely pistachio, but you can depending on what you're going to use the paste for, you can always add a little honey or oil to sweeten or thin it out.
My paste is still grainy and has more texture than some pastes that you can buy. I'm not sure how to remedy this other than to add a few drops of almond oil, and pressing the paste through a chinoise.
Pistachio Paste
3 oz. unsalted, shelled pistachios
--pulse the pistachios in a food processor for 5-10 minutes or until the nuts resemble a paste. This will come together quicker than the almonds.
