| Caramel Apple Oatmeal Cookie |
It seems as if oatmeal has had a makeover these days. I've been experimenting with oatmeal quite a bit lately and have determined that the bland, soggy porridge is a thing of the past.
These oatmeal cookies are not your run of the mill, boring, raisin packed pastry. These have it ALL. Chewy, buttery goodness with bits of creamy caramel and tangy apple pieces packed into one cookie.
Even my husband (who likes oatmeal about as much as having his leg chewed off) will attest to their divine flavor.

Caramel Apple Oatmeal Cookies
10 tbsp. unsalted sweet cream butter
1 c. light brown sugar
1/2 c. demarara sugar (raw sugar)*
1 large egg
2 1/2 c. whole grain rolled oats
2/3 C. whole wheat flour
1/2 tsp. baking soda
1/8 tsp. salt
2 oz. dried apple rings, chopped
8-13 caramels, chopped
--preheat oven to 350°F
--line baking sheet with parchment paper
--in a large bowl, cream together first 4 ingredients
--add next 4 ingredients and mix well
--fold in the apple and caramel bits
--with a small ice cream scoop (or tablespoon) drop heaps of cookie dough onto parchment paper at least 2-3 inches apart
--bake for 10-12 minutes or until edges of cookies are slightly browned. Remove from oven and allow to cool on cookie sheet for 1-2 minutes and then remove to a wire rack. If cookies start to fall apart when you attempt to remove them from the baking sheet, allow to cool for a little longer before trying again.
*regular granulated sugar can be used in place of the raw sugar

ReplyDeleteI recommend using the caramel bits. The syrup would make the cookies spread a little too much and you would end up with a big mess. Also, freezing the syrup wouldn't make the caramel bits because once they thawed they would again be syrup :)
DeleteHowever, caramel is REALLY easy to make in a pinch. I learned the Cuban method from my time spend in Miami. Take a can of condensed milk, (like Eagle Brand) and place UNOPENED in a pot. Cover the can with water and heat to med-low for a couple of hours. You can also throw it in your crockpot and cook on LOW for about 6-8 hours. It makes a very good caramel that's also perfect for Tres Leche! I hope that this helps :)
