| Slushy Shot Cups |
Well, it seems as if frozen cocktails will be the theme of this week. I thought that packaging them in the fruit cups would be a cute idea.
These frozen treats are very tart, but you can add a little sugar, honey or simple syrup to sweeten them up. I like my slushies pucker-worthy.
They turned out quite strong (I like a cocktail with a bit of a bite) and weren't completely frozen due to the alcohol content (wow, I'm making myself sound like a winner!). You can always add a little juice or water to make the slushy a little more solid, or to tone down the strength of the cocktail.

Cherry Lemon Drop Slushy Shot
~makes about 8 lemon cups
5 oz. Whipped Cream flavored Vodka
2 oz. freshly squeezed lemon juice
3 oz. water or cherry juice
1/4 tsp. Cherry Kool-Aid
--cut the tops of off lemons and carefully run a knife alone the inside of the lemon to release pulp. You won't get all of the pulp, but try to get as much as you can. Squeeze juice into a bowl and then remove seeds and pulp with a melon baller or a spoon. Reserve juice.
--mix all of the ingredients together and pour into a container to freeze for at least 4 hours or overnight (preferably)
--spoon slushy into lemon cups and serve immediately

Coco Lime Slushy Shots
~makes about 8 lime cups
5 oz. Pinnacle Key Lime Pie Whipped Vodka
2 oz. coconut flavored rum
2 oz. freshly squeezed lime juice
1 oz. water
--cut, juice and remove pulp from limes just like the lemons.
--mix all ingredients together and pour into a container to freeze for at least 4 hours or overnight
-spoon slushy into lime cups and garnish with toasted coconut if desired. Serve immediately




Looks good. And they actually make whipped cream flavored vodka? Lord help me!
ReplyDeleteOh my Dear, you should check out Pinnacle Vodka's website. They make a multitude of tasty vodkas. They're my guilty pleasure. I love to use them in my icings and they have flavors such as Swedish Fish, Cake, Cookie Dough...you name it, they probably have it!
