Chocolate Amazeballs

Granola is an easy To-Go snack if you're ever in a rush. I like to keep a baggie of granola balls in the freezer if we're ever pressed for time, or if I ever get a case of the munchies. They're sweet enough to curb my sometimes ferocious sugar cravings, and filling enough that I won't have to eat 5 before I'm satisfied. Here are one of the recipes that I've come up with.

These granola balls do not contain any added sugar, (other than the nutella) butter, or flour. They're filling because of the oats and have a minimal tang due to the berries. The cocoa and Nutella compliment the banana very nicely.

Ingredient List:
1.5 C. Whole grain quick oats
1/2 C. Shredded coconut (sweetened or unsweetened)
1/4 C. Nutella*
1 Tbsp. almond milk (or skim)
2 Tbsp. cocoa powder
1/4 C. Dried berries
1 medium ripened banana

--Preheat oven to 350°F.--

--Line a baking sheet with parchment paper

--Mash your banana with a fork in a mixing bowl.
--Add the almond milk and Nutella. Mix until banana is creamy and slightly lumpy.
--Add the oats and shredded coconut to the banana mixture. Sift in the cocoa powder to avoid clumps of cocoa.
--Mix until oats are moistened. Fold in the dried berries.

--Pack granola into a small ice cream scoop (or tablespoon) and turn out onto parchment lined baking sheet
--Bake for 10-12 minutes or until slightly firm

*You can substitute any nut butter for the Nutella.
