| Creamy Swiss and Pear Quesadilla |
If you're ever hosting a brunch or entertaining friends, this pear quesadilla is great as an appetizer or as a small meal for brunch. I saw this recipe years ago in a Southern Living cookbook that an old boss gave me. The ingredients compliment each other very well and can be served warm (as pictured above) or cold (as pictured below).
Drizzle with honey and sprinkle with cinnamon for a sweeter treat!

Creamy Swiss and Pear Quesadilla
1 medium pear of any flavor
2 low carb tortillas
2 wedges spreadable light swiss cheese
1 tbsp. chopped walnuts
--Peel, core and slice your pears.
--spread one wedge of cheese onto one tortilla; repeat with 2nd wedge and tortilla
--arrange pear slices onto tortilla and top with walnuts
If serving warm...
--heat a medium sized skilled over medium-low heat
--heat quesadilla until the tortilla is slightly crisp. CAREFULLY flip quesadilla and heat remaining side.*
--using a pizza cutter slice into four individual servings
*You can also bake the quesadilla at 350°F for about 5 minutes on each side to yield the same result.
