| White Chocolate Dusted Cranberry Granola |
Granola!! I could probably survive off of this sweet crunchy goodness if my body didn't require those pesky vegetables to maintain proper performance.
In my household granola is used as a topper for almost everything. I wasn't too impressed with the small varieties of store bought granola (Target is one exception. Archer Farms has many yummy flavors of the oat and nutty goodness. However, leaving my house and traversing a supermarket usually ends in a disaster!!) so, I decided to create my own granola recipe instead!
I hope that you enjoy this recipe! It doesn't actually contain any white chocolate, as I like my granola to be slightly healthy(ish). I used a package of White Chocolate Pudding mix, but you can use any flavor of pudding mix that you like!

White Chocolate Dusted Cranberry Granola
4 C. old fashioned rolled oats (not quick)
1 package sugar free/fat free Jello White Chocolate Pudding mix
1/4 C. wheatgerm
1/3 C. chopped walnuts
1/2 C. chopped almonds
1/2 C. dried cranberries
1/2 C. unsweetened shredded coconut
1 C. light cranberry juice
2 tbsp. coconut oil
1/4 C. light brown sugar
1/2 C. raw honey
--preheat oven to 350°F
--in a large bowl combine first 6 ingredients
--spread coconut flakes on a baking sheet and roast until lightly browned; add flakes to the oat mixture.
--reduce oven to 300°F
--in a small saucepan, heat cranberry juice until boiling and cook until juice is reduced by half (around 5 minutes). Remove from heat and stir in sugar, honey and coconut oil.
--pour liquid mixture into the oat mixture and stir until evenly coated
--lightly spray two baking sheets with cooking spray and pour granola mix onto sheets, shake gently to create an even surface.
--bake in 10 minute intervals; remove sheets from oven to stir granola so that it cooks evenly; bake for about 30-35 minutes or until granola is golden brown.*
--allow to cool completely before storing.
*granola will still be slightly soft when first removed and will harden upon cooling.
