| Black Bean Fritters |
These protein packed patties can be served a la carte, or atop a bun as a tasty burger substitute. The most miraculous thing about fantastic fritters: MY KIDS ATE THEM!! My kids don't eat anything unless it's boxed, processed and guaranteed to give you a heart attack. In fact, the majority of my day is spent muttering curses under my breath while I dump my all of my hard work down the garbage disposal.
So I'm almost beside myself as I pass this along to you. I hope that you like it as much as they did! Enjoy!
Black Bean Fritters
1 can low sodium black beans
2 small sweet peppers
2 green onion stalks
2 garlic cloves
1 tsp. dried onion flakes
1/2 tsp. black peppercorns
1/2 tsp. red pepper flakes
1/2 tsp. brown sugar
1/4 tsp. salt
1 large egg white
1/4 c. oat flour*
2 tbsp coconut oil
--place first 9 ingredients in a food processor and pulse until blended (for a meatier texture, pulse less)
--scrape into a bowl and add egg white and oat flour, mixing until blended
--heat 2 tbsp. coconut oil in a large skillet over med-high heat
--pan fry fritters for about 5-6 minutes on each side or until patties are no longer soft
*you can substitute bread crumbs or old fashioned oats for the oat flour. The oats will give the patties a thicker texture.
