Raw Granola Coconut Creme Pie

This is my very first experiment with a "raw" dessert. I have been craving sweets lately, and by craving, I mean that I would do unspeakable acts for an entire chocolate cake. However, I do have my health to uphold (sigh) so I wanted to venture into the Raw side of cooking (oxymoron). These Creme Pies are surprisingly sweet, and with no processed ingredients (other than the unsweetened cocoa powder), flour, butter or sugar (except honey). 

These Creme pies are filled with coconut butter, but any nut butter can be substituted.

Raw Granola Coconut Creme Pie (dough)
--makes 16 cookies

5 oz. Pitted Dates
1/4 c. unsweetened cocoa powder
1/4 c. Old Fashioned Whole Grain Oats
1/2 c. low fat Granola
2 tbsp. honey
1/4 tsp. salt

--place dates, cocoa powder, honey and salt in a food processor and pulse until well blended.
--scrape dough into a bowl and add in granola and oats. Stir until ingredients come together and turn out onto a sheet of parchment paper or Silpat. The dough will be really sticky!
--press another sheet of parchment paper onto dough ball. Flatten and roll out with a rolling pin until about 1/8 inch thick. Using cookie cutters, cut out desired shapes and place onto another sheet of parchment. Chill the cookies in the freezer or fridge to make spreading the filling easier. 

Coconut Creme Filling

4 tbsp. coconut butter
2 tbsp. honey

--mix filling together and spread 1/2 tbsp. onto cookies
